Banana Ice Cream

I told the boys I was going to attempt to make banana ice cream.  They looked at me like I had 3 heads.  What ingredients do you need, they asked.  Just bananas, I replied.  If I could have photographed the confused look on their faces.  Even my hubby was giving me a look :)

Why not?  The website I found the recipe on says I should be able to make banana ice cream with just bananas and a food processor.

Let's see if this works....

We got our bananas out of the freezer.

Put them in the food processor:

Turned food processor on for a few minutes until it resembled ice cream:

Spooned the banana ice cream into bowls and drizzled with Laura's chocolate syrup- so yummy:)

It was a huge success.  Who would have thought to take ordinary really ripe bananas, freeze them and them food process them and Voila~ healthy ice cream with just 1 ingredient- yay :)

The boys want me to experiment with chocolate and peanut butter banana ice cream.  I think I just might :)

Veggie Fried Rice Recipe

For those instances where you crave fried rice from the local Mexican restaurant.  Our Veggie Fried Rice doesn't exactly taste the same but it does keep me from getting take out and this doesn't give me icky heart burn like the take out kind does.

Our Veggie Fried Rice is super simple to make and quite healthy.

Here is how we make ours:

Veggie Fried Rice
Brown rice- cooked and set aside
Mushrooms
Green Peppers
Edamame
Carrots
Basically any veggies you want to throw in would work
4 eggs, beaten
Low Sodium Soy sauce

In your skillet, put a little Canola Oil to coat the bottom of the skillet.  On medium high heat, put your veggies in and let them cook until they are soft.  Push your veggie mix to the sides and make a hole in the middle of your skillet.  Add your beaten eggs and cook.  Mix it up.  Add brown rice to veggie egg mixture.  Add enough soy sauce to lightly coat the rice.  Make sure rice is heated through and serve.  Enjoy:) 

Our family loves our Veggie Fried Rice.  Fast and easy to make and not to mention healthy:)  I get my boys to eat a wide range of veggies with this dish.

Operation Christmas Child

At the super fun Fall Festival, I found out that the church we have been attending participates in Operation Christmas Child- WOOHOO :)  We were so excited.  We love what Operation Christmas Child does but were unable to participate while in Virginia because we had a hard time finding a drop off location.  Our church did not participate and where we lived, there was no place around that served as a drop off location.

We were so excited to find out a church here in Florida that participates.  We got a box- yea!! 

We are huge Veggie Tales fans, so this very cute how Bob and Larry pack a shoebox is a must see.  For those unfamiliar with Operation Christmas Child, visit here to learn more.

Since this is our first year participating in Operation Christmas Child, we wanted to start off by doing 1 box.  First things first, boy or girl.  I wanted a girl, but I was outnumbered.  Boy is it.  Age Group?  Nathan wanted to pack a shoe box for a kid his age group- age 5-9. 

I took Nathan and off to the Dollar Tree we went.  We had a blast filling our shoebox full of goodies a boy Nathan's age would love to receive.

October 2013 Goal Update

Let's see how we did in the month of October with our 2013 goals:

Here are our 2013 Goals: (in no particular order):

1) To not eat out or at least to not pay out of pocket, with the exception of tips. If we want to treat the family to a meal out, we will make sure we have a gift card to cover all of us.~ Did awesome with this:)

2) Pay off 2 credit cards~ We did it- we are so very excited. We paid off 2 credit cards in March- WOOHOO:) And we just merged 1 credit card into another with a super low interest rate. We are now down to making 2 credit card payments instead of 6:)

3) Not to use any of our credit cards for 2013. To pay cash for everything.~ Still doing great with this goal.

4) To lower our grocery budget. Our current grocery budget is $400 month for our family of 6. Our goal is to lower that amount and to save the remainder. We are still trying to get a feel of a good grocery budget out here. Some of the prices are higher than what we paid in Virginia :(

5) To create a monthly meal plan for our family, to use leftovers more efficiently and to make use of everything in our pantry and freezer.~ Doing great with this goal.

6) Lose weight- I need to get motivated to lose this baby weight- my goal is to lose 20 lbs this year.~ We are not going to a gym here.  I am riding my exercise bike almost every morning for 30 minutes and then doing an exercise video for 30 minutes that I checked out from our library.  I have 10 more pounds to go to get to hit my weight goal :)

7) Morning devotions, prayer time and more bible reading~ Doing awesome with this goal.  The church we have been attending gives weekly prayer guides to do at home.  I feel great when I get up in the morning with my morning coffee and dive right in to devotions and prayer :)

8) Monthly date night with hubby- whether we go out or stay at home, pop popcorn and rent a movie~ Didn't do any type of date night with hubby in October- need to schedule that as soon as possible.

9) To spend quality family time together. With everyones schedule and us running all over creation, I would love to spend more quality time together- no tv- us playing games, talking, enjoying each others company. I think we are going to claim Saturday's as family fun day:)~ We are loving going out and exploring our new town in our new state :)  We played in our flooded street, went to the beach, went to an Ecological Park, and went to a Fall Festival :)  We are having fun exploring.

10) Not to use our dryer to save on electricity and lower our electricity bill~ With just moving, we have no clue what to expect our electric to be.  While our house is still on the market in Virginia, we are paying electric bills for 2 houses :( 

11) To make a better effort to blog more regularly and to make a blogging schedule~ Need to get better organized and actually make a blogging schedule and keep up with it.

12) To do 1 project a month and blog about it~ I need to look at the remaining months we have left and see what we projects we can do.

Lowes Build & Grow Clinic~ November 9, 2013

Lowes will be hosting a Build & Grow Clinic on November 9th at 10am. We are so happy to get back to going to these again.  The boys really love them:)

If you are looking for a great free activity that you can do with your kids- you should check out the Lowes Build & Grow Clinics. Little Michael and Nathan love them. They love being able to do hands on projects with our help.

This Saturday, Lowes Build and Grow Clinic will be building a Pull Back Car- both boys are super excited about this one.

To sign up for this Build & Grow Clinic, simply go to the Lowes Build & Grow Clinic website, which they have redone to make it more user friendly. I am loving this new website. You register all your information. Then when you visit the website to sign up for an upcoming clinic, all you have to do is sign in and check which kids you are signing up. Don't forget to print and sign the waiver. And you and your child(ren) are ready for a really cool FREE hands on project.

Once you and your child(ren) complete the project they will receive a neat patch to put on their Lowes Build & Grow apron. If this is your first clinic, your child(ren) will receive a free Lowes Build & Grow apron and goggles:) The more clinics you do, the more patches you get to put on your kids apron and they can show them off with pride:)

Coupon Question

Lately our Sunday newspapers have been stingy with their coupons.  I usually buy 2 papers a week.  And to my surprise, the last month of newspapers have had no inserts.  I feel I have wasted my money buying just the paper, especially 2 of them.

At first, I thought it might be the store we were buying them at.  So, we bought 2 newspapers at Walgreens.  Back home, I never had any issues with missing coupons at Walgreens.  Well, here no inserts at all :(

Now, I am looking for a good reputable coupon source where I can buy whole inserts at a decent price with no or low minimums.  Any one know of any?  Comment below and let me know :)  Thanks :)

Menu Plan for the week of 11/03/2013

Happy November.  New month means new grocery budget- yay :)  Unfortunately, thanks to our grocery budget explosion of last month, we kind of had to borrow from this month's grocery budget in order to feed our family last month.  This month we have $250 to work with.  I think I can, I think I can :)

I was happy when I stumbled on Erin's from 5dollardinners.com post about how she planned 20 meals for $150 shopping at Costco.  It triggered my interest.

We don't have a Costco here, at least not that I am aware of.  And even if we did, I don't have a membership there, so we still wouldn't be able to shop there.  So, I am going to use her recipes for the 20 meals she has planned and see what we can get them for using the stores we have available to us here in Cape Coral, FL.  We are also going to need to supply 10 more dinners, breakfast and lunches for the month.
