Veggie Fried Rice Recipe

For those instances where you crave fried rice from the local Mexican restaurant.  Our Veggie Fried Rice doesn't exactly taste the same but it does keep me from getting take out and this doesn't give me icky heart burn like the take out kind does.

Our Veggie Fried Rice is super simple to make and quite healthy.
Here is how we make ours:

Veggie Fried Rice
Brown rice- cooked and set aside
Mushrooms
Green Peppers
Edamame
Carrots
Basically any veggies you want to throw in would work
4 eggs, beaten
Low Sodium Soy sauce

In your skillet, put a little Canola Oil to coat the bottom of the skillet.  On medium high heat, put your veggies in and let them cook until they are soft.  Push your veggie mix to the sides and make a hole in the middle of your skillet.  Add your beaten eggs and cook.  Mix it up.  Add brown rice to veggie egg mixture.  Add enough soy sauce to lightly coat the rice.  Make sure rice is heated through and serve.  Enjoy:) 

Our family loves our Veggie Fried Rice.  Fast and easy to make and not to mention healthy:)  I get my boys to eat a wide range of veggies with this dish.
