Veggie "Lo Mein" Sketty recipe

When we were on our diet, we ate many new foods.  Some we liked and some not so much. We have taken the recipe that was part of the diet and tweaked it to our liking.  I wanted to share this very healthy and very easy dish to make that even my kids loved.

Veggie "Lo Mein" Sketty
Whole Wheat Spaghetti
Garlic
Ground Ginger
Low Sodium Soy Sauce
Broccoli
Mushrooms
Carrots- peeled and shredded
Bell Pepper- any color works great
Spinach
Any other veggies you want to throw in
A little oil

1) Cook Spaghetti, drain and set aside.
2) In skillet, place a couple tablespoons of oil and coat bottom of skillet.  Skillet should be on medium high heat.
3) Add all veggies except spinach and cook until veggies are tender.  Stir often.
4) Add spinach and cook until wilted
5) Sprinkle garlic and ginger on veggies and stir
6) Add cooked veggies to spaghetti
7) Use enough low sodium soy sauce to lightly coat the spaghetti and stir
8) Serve and enjoy
Veggies all in skillet before being added to the "sketty"- Super Yummy

The beauty of this recipe is that you can use any leftover veggies you have.  I also don't measure anything with this recipe.  We love garlic, so I put a lot of garlic in this dish and lightly sprinkle the ginger.  Plus the veggies cooking in the skillet is so pretty, all the different colors blending together to form this oh so yummy dish :)
