Our Menu Plan for the week of 04/27/2015

How was your weekend?  Our weekend was fantastic :)  We took the boys on a little getaway.  The boys said it was the best weekend ever.  Plus Michael and I celebrated our 12th wedding anniversary :) I will fill everyone in on all our amazing weekend details later :)

Here are our menu plans for this week:

Breakfast
Blueberry Morning Baked Oatmeal X2- from Chocolate Covered Katie cookbook
Pumpkin Chocolate Chip Muffins with fruit X2
Pancakes with fruit X2
Oatmeal with nuts and raisins

Lunch
Salad with homemade ranch dressing and a banana for myself and hubby when he is home
Sandwich with carrots and grapes for everyone else or leftovers

Dinner
Lentil, rice, salsa tortillas with zuchinni
Beans & salsa casserole with tortilla chips and green beans
Mexican Casserole with zuchinni
Pasta Fagioli
Cheesy Bean dip served with tortilla chips, cucumbers and tomatoes
Spaghetti with peas and garlic bread
Minestrone Casserole with carrots

Snacks and desserts
Apples slices
Carrots
Cucumbers
Bananas
Grapes
Popcorn
Strawberries
Pears
Vegan Peach Cobbler Ice Cream- Mmmmm
