Our Menu Plan for the week of 04/06/2015

We hope everyone had a wonderful weekend and a blessed Easter :)  We had a nice weekend.  Our church had an Easter Egg hunt and the boys really enjoyed hunting for eggs.  And then of course, our normal fun filled Saturday grocery shopping :)

Our first week of bean month, went really well.  Everyone enjoyed all the lentil dishes we had.  Bring on Week 2 of bean month :)

Here is our menu plan for this week:

Breakfast
Blueberry Morning Baked Oatmeal X2- from Chocolate Covered Katie cookbook
Pumpkin Chocolate Chip Muffins with fruit X2
Pancakes with fruit X2
Oatmeal with nuts and raisins

Lunch
Salad with homemade ranch dressing and a banana for myself and hubby when he is home
Sandwich with carrots and grapes for everyone else or leftovers

Dinner
Chili
Chili potatoes with asparagus
Spaghetti with zuchinni and garlic bread
Southwest Roll Ups with green beans
Beans & Salsa with taco seasoning and cheese served with tortilla chips and green beans
Lentil, Rice and salsa tortillas with zuchinni
Minestrone Casserole with carrots

Snacks and desserts
Apples slices
Carrots
Cucumbers
Bananas
Grapes
Popcorn
Strawberries
Pears
